Sourdough Irish Soda Bread
INGREDIENTS
140 grams sourdough discard
360 grams buttermilk (mixed Greek yogurt and milk if you don’t have buttermilk)
1 large egg, lightly beaten
275 grams all purpose flour
200 grams pastry flour
50 grams whole wheat flour
40 grams sugar
12 grams salt
1 tsp baking soda
70 grams unsalted butter
Preheat oven to 400 degrees. .
In a small bowl whisk together the sourdough discard, buttermilk and egg. Set aside.
Mix the flours, sugar, baking soda and salt together in a bowl and lightly mix together.
Grate the cold butter directly into the mixture or cut the butter into small chunks or use a pastry cutter.
Pour the buttermilk mixture into the flour mixture and stir to lightly incorporate. Shape into a round circle
place on parchment paper on a pan or directly onto a cast iron pan.
Bake for 20 min, then cover with foil and bake for 15-25 more minutes.
