Grilled Cheese and Tomato Soup
A friend needed a comforting meal, and requested this. It’s worth ALL of the extra steps….

Grilled Cheese
You think it’s the way you’ve always made it. The extra steps make all the difference.
8 slices of good bread. Sourdough is a nice touch.
2 cups of cheese of choice, grated
1 stick/8 tbl butter, room temperature
Mayonnaise if you dare…..and Dukes if you can get it
Heat a heavy pan or two, cast iron is a a great choice.
Spread ½ a tbl of butter on one side of each slice of bread.
Fry/toast the bread slices, butter side down, on the pan until golden.
Remove to a plate or cooling rack while toasting others. Place unbuttered side up.
Take a slice of the toasted bread, butter the untoasted side, and place in the pan.
Spread ½ cup of cheese on the bread.
If doing mayo (and you should), spread the mayo on the toasted side of a second piece of bread.
Place the 2nd piece of bread, toasted side down, on top of the cheese.
Spread butter on the top of the 2nd slice of bread, this should be an untoasted side.
Fry until the bread is well browned, gently flip over, and fry the other side.
remove when browned, cut in 1/2 , serve with the soup.
