Creamed Spinach
w/ parmesan and bechamel
(Double if you’d like more)
1 cup 1/2 and 1/2
2 tbl butter
5 tsp flour
nutmeg (pinch or grating)
1 lb spinach (i used prewashed baby)
2 tbl olive oil
1 small onion, finely chopped
2-3 cloves garlic, diced
1/2 cup parmesean, grated, reserve 2 tbl
salt
pepper
Pre heat oven to 400 degrees
butter a small baking dish (generously!)
bring the 1/2 and 1/2 to barely a simmer, or heat in microwave for 1 1/2 minutes on high
melt the butter in a saucepan
whisk flour into butter, continue to cook on a low heat for 2 minutes
remove from heat
very slowly add in 1/2 and 1/2, whisking vigorously
put back on heat, and whisking occasionally, heat until thicker than cream, about 3-5 minutes
add pinch or few gratings of nutmeg
saute spinach in 1 tbl of olive oil until wilted
Remove spinach and put in colander, press out the water
sauté onion until translucent
add garlic, sauté for 30 seconds
add spinach (chopped if not using baby), sauté for 30 seconds
add bechamel sauce and all but 2 tbl of the parmesean
mix well, add salt and pepper.
pour into prepared dish
scatter remaining parmesean on top
bake 15-20 minutes
